Recipes for the Single Person in A Share House | Deconstructed no burrito Mexican dinner!

As I’m a single person who lives in shared accommodation (and have been for many years), the one frustration I have with most recipes and cook-books is that they are NOT aimed at someone who has limited storage space (and cooks only for one person – themselves). In most share-house situations I’ve been in I have only had limited space in the freezer, one “shelf” in the fridge and the same in the pantry/cupboard – so naturally I cannot ‘hoard’ a lot of ingredients.   The other thing is that I live on a limited budget too at the moment (less then $50 per week) for groceries. Layers of lettuce, shredded carrot, diced tomato and cucumber, lean organic beef mince with capsicum salsa, mashed avocado, a little corneal of sour cream finished with a sprinkle of herbed buffalo feta.#yummiegoodness Note: If you do not eat beef, red kidney beans and green beans and cauliflower work a treat. This would be an easy dish for you x 2 or 4 if you get 500 g mince otherwise just ask a butcher to give you 250g lean beef.  All you need is 1 carrot, 1 tomato, 1 Lebanese cucumber, a small bag of lettuce leaves, 1 avo, 1 jar of salsa (any kind you like), lime, and small tub of sour cream if you want it but not necessary. A little sprinkle of any cheese you like (the deli will sell you what ever amount if what ever cheese you want. Cook and chop save half in a container layered and ready to go for lunch or dinner the next day! Chicken or turkey mince would be great with this and fish too otherwise veggo as suggested!

I thought I would re-do Experiment 6 whilst I was doing my Xmas house sitting since I was going to be here (house sitting) for long enough.  Upon further reflection, I decided against it for the same reason of what happened at home – the dogs might destroy the experiment.  Instead, in the new year when I’m home more than away I will re-do the experiment.  I’m going to re-try growing cat grass again.

For experiment 5 – I asked:  Should I transition “Gold Coast Lost and Found Pets” (which is a successful Facebook page I created back in 2011) into a “heart centred” social enterprise ?

My inner guidance still says to not mess with it too much as “it ain’t broke why fix it” plus there isn’t any ‘real’ way to make money from it without damaging the page (making it too commercial and less heart centred).  In the end, it would just stay as my way of giving back to the community and keeping animals involved in my life whilst I develop Lady Vee.

As per the above Facebook post I made… and even now… I keep forgetting to “say grace” as such for the food I’m eating. I also do not need to gain or loose any weight and feel that overall I have a good attitude towards my food ….. thus the reason I personally have never “diet-ed” in my life.

INSTEAD … I’ve changed the Experiment slightly and it is more an on-going (re-training of my mind) type of scenario.

For Experiment 7 – My habit when I go shopping is to say to myself at times “I can’t afford that”.  It isn’t that I think negatively of the food I’m buying… it is that I have been watching the cost of my grocery shopping due to having limited funds more often than not for so long…. it’s really screwed with my shopping habits.

I’m just trying to be more observant of my thoughts.  Instead of saying ” I cannot afford that ” … I say “I have chosen to spend my money on other things today!” or “I can afford it … next time” or “I can afford it next week” or something…  just re-phasing how I speak to myself when making my purchases.

Plus when shopping… allow myself to purchase something nice at least once during each shop.  That nice can be treat-orientated or organic coconut juice …  whatever.  I am teaching myself to splurge on at least ONE item each grocery shop.   Or it can even be buying more “gourmet” soup versus the cheap soup in a can (paying $1 more for the quality sometimes).

I’m noticing the change in how I speak to myself is having an impact.

Grateful In April – play the redemption game

Find a positive trait in someone you don’t like. Yep, even if they have totally irritated, hurt or angered you, find one redeeming aspect of this person that you could admire (even if it’s just their taste in coffee – you have to start somewhere!)

Go on, push yourself to come up with a couple more good points. Too hard? Too easy? Move on to another person. Notice how you feel when you think happy thoughts. Hang on to them and enjoy the rest of your day.

Facebook Advert — Chocolate is as healthy as fruit


I seriously got the following snippet of information from a website that was advertising via Facebook advert moments ago:


……research has suggested that chocolate can be just as healthy as fruit. When tested and compared to juices from ‘superfruits’ such as blueberries and pomegranate, dark chocolate was found to be higher in antioxidants, which are essential for fighting disease and preventing wrinkles. For a healthy treat, it is best to go for a pure dark chocolate as milk, sugar and too much processing can reduce these health benefits.


Now if you mix the above with a clean product like Xocai provides with added Acai berries (which is one of those “super fruits”) and yes blueberries (as mentioned above)…. yeah now do you see why I absolutely LOVE this product ?!

Zzzzz Sleep Zzzzz

One of the benefits that was touted to me as part of consuming this particular chocolate was improved sleep or rest.

Now I’ve been consuming it daily (and sometimes up three or four different pieces – remember back when I said I was a chocoholic ? I was NOT lying !! hahahaha)….  I’ve noticed a few changes and one of them IS improved rest.

Another is that when the 3 oclock slump usually hits me… I have a Xocai X Power Square and it’s better than a cup of coffee or even anything else…  the energy boost also seems to last a lot longer than if I did have a cup of coffee or anything else.  The best thing about these X Power Squares is that they’re so compact and easily portable…  the only downside is that they’re chocolate so I ensure I keep them with one of the ice/gel packs that was packed with my original order.

What I really like about this chocolate is that I know I can share it with so many people because diabetics, those with gluten intolerance, vegans, and pretty much anyone can “eat” this chocolate compared to any other chocolate available in the marketplace.

Yes there are other stores here in Australia that sell similar (but not the same) online however here’s the crux — none of them will give you a sample no pressure.  This was the only chocolate where I was able to ring up someone local — and I got a sample! 🙂
